  • 1 onion (s)
  • 1 clove garlic
  • some olive oil
  • 3 sweet potato (s) (approx. 500 g or a little more)
  • 1 liter vegetable broth
  • 75 g peanuts without shell and some for the toppin
  • 1 can coconut milk (400 g)
  • 2 tablespoon lime juice
  • salt and pepper

Instructions

  1. This delicious sweet potato soup with peanuts is quick and easy to make, like all soups. But the best thing about this soup is that it is vegan and you don`t miss any meat or other animal product at all. This soup is the perfect pick-me-up, especially in winter.
  2. Peel and dice the garlic and onion. Put some olive oil in a large saucepan and sauté the garlic and onion. Also peel and dice the sweet potatoes, then add them to the pot and just cover with the vegetable stock. Bring to the boil and simmer for 15-20 minutes, until the sweet potatoes are soft.
  3. In the meantime, peel the peanuts. When the sweet potatoes are soft, puree the soup. Then stir in the coconut milk and mix in the peanuts. Season with lime juice, salt and pepper and sprinkle the remaining peanuts on top before serving.
