Instructions

  1. The dough is enough for about 6 pieces.
  2. First wash the sweet potato, poke a few holes in it with a fork and then bake it at around 200 ° C until the sweet juice comes out. Then it should be soft enough. To work faster, simply cut the sweet potato into finger-sized pieces and either push it into the oven at 200 ° C or cook it in the steamer over water until it is soft.
  3. While the sweet potato is cooking, soak the pitted Medjool dates in warm water, melt the coconut oil in a water bath and process the oatmeal into fine flour in a food processor. Then put the oatmeal flour together with the pinch of sea salt, cinnamon, vanilla and cocoa powder in a mixing bowl. Then process the two teaspoons of chia seeds with about three times the amount of water to make chia gel, this serves to bind the brownie dough.
  4. The sweet potato should now be ready. Take out of the oven (or pot) and remove the shell if necessary. Just peel it off with your fingers, hot!
  5. Then the sweet potato is crushed together with the coconut oil, the soaked dates and some of the soaking water in the food processor to a homogeneous thick cream. This makes the brownies nice and juicy in the end.
  6. Now add the cream and chia gel to the flour mixture and knead everything with a hand mixer. Chop the walnuts and fold in.
  7. Finally, put the finished brownie dough in a suitable brownie baking pan and bake in the oven at 180 ° C for about 30 minutes. Alternatively, a baking dish is also possible. For this it is best to grease them with virgin coconut oil beforehand.
  8. Take the pan out of the oven and cut rectangular pieces into the cake.
  9. Tip: Instead of walnuts, you can also add other nuts or dried fruits, such as Brazil nuts or dried unsweetened figs, to the dough. You can do several at once. If you don`t like cinnamon, just leave it out. But he doesn`t dominate very much.
