Ingredients

  • 300 g onion (s), finely chopped
  • 4 tablespoon butter
  • 3 tablespoon ginger, freshly grated
  • 12 carrots, peeled and diced
  • 2 sweet potato (s) (orange-colored meat), peeled and diced
  • 950 ml chicken broth
  • 225 ml orange juice (preferably freshly squeezed)
  • some salt and pepper
  • Nutmeg, freshly grated
  • some orange (n) zests

Instructions

  1. Melt the butter in a large heavy saucepan. Simmer the onions and grated ginger with the lid closed for about 25 minutes on a low heat.
  2. Then add the carrots, sweet potatoes and chicken broth and bring to a boil. Reduce the heat and let the lid simmer gently for approx. 45 minutes. Then check the carrots to see if they are soft.
  3. Puree the soup with a hand blender. Add the orange juice and the spices and put on the stove again. Stir, season to taste and rub some nutmeg over it. Serve hot.
  4. Tip: If you like, you can sprinkle homemade croutons on top.
