Ingredients
- 1 kg sweet potato (s), red, diced
- 3 large carrots, diced
- 2 medium onion (s), diced
- 2 large cloves garlic, chopped
- 1 liter water
- 1 cup coconut milk
- 1 teaspoon curry powder
- Salt and pepper from the mill
- 1 bunch coriander greens or parsley for garnish
- little olive oil

- Sweat the vegetables in a little olive oil until they are fragrant. Deglaze with the water and cook the vegetables until soft.
- Puree in the food processor or with the blender. Add more water depending on the desired consistency.
- Stir in coconut milk and curry powder and bring to the boil again. Season to taste and serve.
