Ingredients

  • 1 kg sweet potato (s), red, diced
  • 3 large carrots, diced
  • 2 medium onion (s), diced
  • 2 large cloves garlic, chopped
  • 1 liter water
  • 1 cup coconut milk
  • 1 teaspoon curry powder
  • Salt and pepper from the mill
  • 1 bunch coriander greens or parsley for garnish
  • little olive oil

Instructions

  1. Sweat the vegetables in a little olive oil until they are fragrant. Deglaze with the water and cook the vegetables until soft.
  2. Puree in the food processor or with the blender. Add more water depending on the desired consistency.
  3. Stir in coconut milk and curry powder and bring to the boil again. Season to taste and serve.
