- 2 sweet potatoes, approx. 400 g each
- 2 teaspoons olive oil
- 150 g hummus
- 50 g spinach leaves, frozen
- 100 g feta cheese
- salt

- Wash the sweet potatoes and rub dry. Then cut in half. Now brush the four parts completely with the olive oil.
- Preheat the oven to 200 ° C (top and bottom heat). Now line a baking sheet with parchment paper and bake the potato halves with the cut side up for about 40 minutes.
- Then use a spoon to remove some of the pulp from the potatoes. Mix this with the hummus and the thawed spinach and season with salt.
- Also lightly salt the hollowed out potato halves and fill with the spinach mixture. Cut the feta cheese into slices and spread over the top.
- If you want, you can put a sprig of fresh rosemary on each potato half. Now bake the potatoes again at 200 ° C for about 10 minutes.
