Ingredients

  • 0.5 ½ small banana (s)
  • 0.5 ½ mango (s), ripe
  • 0.25 ¼ pineapple
  • 2 tablespoon desiccated coconut
  • 8 sheets dough, spring roll dough or wonton dough (TK Asialaden)
  • Powdered sugar, for sprinkling
  • 150 ml pineapple juice
  • 1 tablespoon sugar
  • 75 ml coconut milk
  • 40 ml rum
  • 2 sheets gelatin

For decoration:

  • mint
  • Physalis
  • fat

Instructions

  1. Soak the gelatine in cold water. Then squeeze out and heat or dissolve with a little pineapple juice. Then add the sugar and stir. Now add the remaining juice, coconut milk and rum.
  2. If you don`t have a cream siphon (Easy Whip), pour the mixture immediately into portion glasses and let them cool and gel in the refrigerator for at least three hours, better overnight. The glasses are then ready to serve.
  3. If you have a cream siphon at home, the mixture is placed in the fridge for several hours in the pan until it gels. Then stir with the whisk until smooth, fill into the siphon and close. Screw on a cream charger and chill again in the refrigerator for an hour. Shake vigorously with the device head downwards again before removal. Spray into glasses to serve.
  4. For the sweet spring rolls, clean the fruit and cut into small cubes. Mix with the coconut flakes in a bowl. If you like it sweeter, you can also add a spoonful of honey. Spread out the spring roll dough, one point should always point upwards. Spread one to two tablespoons of fruit in the top third. Brush the upper corner with a little water, fold it forward and press it down. Now brush the two outer corners with a little water, fold them in towards the middle and press them on. Finally, brush on the front corner and completely roll up the roll from top to bottom.
  5. Bake the rolls golden yellow in a deep fryer at 170 ° C, or fry them in a pan with a little oil. Then dry them out on kitchen paper and sprinkle with powdered sugar.
  6. Serving: Place the glasses with the Pina Colada jelly or foam on a plate and serve the sweet spring rolls next to them.
