Ingredients

  • 500 g pasta, taliatelle
  • 1 lemon (s), (untreated)
  • 50 g butter
  • 200 g cream or panna da cucina
  • 1 bunch parsley
  • 100 g parmesan or pecorino cheese (or more)
  • salt and pepper

Instructions

  1. Cook the pasta in salted water until al dente.
  2. In the meantime, wash the lemon with hot water, rub the peel thinly and squeeze out the juice. Heat the butter, add the lemon peel and sauté briefly. Add the cream and season with salt, pepper and lemon juice.
  3. Finely chop the parsley and grate the cheese, drain the tagliatelle and collect approx. 150 ml of the cooking water.
  4. Mix the pasta with the sauce while dripping wet, add parsley and approx. 50g cheese - depending on the consistency of the sauce, add some of the collected pasta boiling water.
  5. Arrange on plates and pour the rest of the cheese over them.
  6. Tip: Fried prawns or salmon sticks also fit in the sauce - but then it is no longer vegetarian
