Tangerine and Creamy Dessert

Delicious, airy, and delicate dessert with rich tangerine flavor. Such a tangerine-creamy dessert will be a wonderful decoration for the New Year’s table in 2021!

Ingredients

  • Mandarins – 550 g (4-5 pcs.)
  • Cream 33% (chilled) – 150 ml
  • Egg whites – 2 pcs.
  • Powdered sugar – 80 g
  • Gelatin (instant) – 10 g

    For decoration:

  • Mandarins – 2-3 pcs.
  • Pistachios – to taste
  • Chocolate – 1 pc.
  • Fresh mint – a few twigs

Directions

  1. Prepare gelatin according to package directions. I used instant gelatin.
  2. Peel and grind tangerines in a blender.
  3. Then rub the tangerines through a sieve to get rid of the films.
  4. Combine tangerine juice with gelatin, mix. Heat over low heat, stirring occasionally, until the gelatin is completely dissolved (do not boil!). Leave the mass to cool.
  5. Beat the cooled cream until a thick fluffy mass (until stable peaks). When the creamy mass begins to hold its shape, stop whipping.
  6. Beat the whites, adding the powdered sugar in portions, until persistent peaks.
  7. Add whipped cream to the cooled tangerine juice, stir with a whisk until smooth.
  8. Then gradually add the whipped whites, gently stirring with a silicone spatula. Then stir with a whisk. The mass should be homogeneous.
  9. Arrange the air mass in glasses, glasses, or bowls. Send to the refrigerator for cooling and hardening for 2-3 hours.
  10. Prepare a dessert decoration. Put the peeled tangerine slices on a plate and send them to the freezer for 10 minutes. This is necessary so that the chocolate does not spread on the slices and hardens faster. Break the chocolate into small pieces, put it in a cup, and melt. (You can melt it in a water bath or, like me, in a microwave oven. Heat the chocolate for 15 seconds, remove it from the microwave oven, stir, put it on for another 15 seconds, and so on up to 4-5 cycles – and the chocolate will completely melt.) Dip the tangerine wedges half in melted chocolate, then put on parchment and sprinkle with chopped nuts. To completely solidify the chocolate, send the tangerine slices to the refrigerator for 10-15 minutes.
  11. Decorate the finished dessert with tangerine slices in chocolate, nuts, and fresh mint. The tangerine-creamy dessert for the festive table is ready! I wish you bon appetit! Happy New Year to everyone and wish you more delicious and beautiful recipes!
