Tartlets with Tomatoes and Cheese Instructions

  1. Defrost the puff pastry, roll out and cut into small squares. Place them in muffin tins with the edges of the dough protruding slightly over the sides. Place in an oven preheated to 200 degrees and bake for about 10 minutes.

  2. Combine goat cheese, salt, sour cream, and chopped herbs (parsley, dill, or green onions). Add a little lemon zest, but just a little bit just for flavor, not acidity. Stir.
  3. Cut the cherry tomatoes on top in a criss-cross pattern and remove a little pulp from the inside of the fruit. Stuff them with filling. (You can add chopped olives, seed olives, and canned fish to the filling.)

  4. Remove the dough tins and insert the stuffed tomato into each of them. Bake the tartlets for another 5-7 minutes, being careful not to burn the dish. Place the warm stuffed tomato tartlets on a platter and serve. Sprinkle with grated Parmesan, if desired.
