Ingredients

  • 1 packet rocket
  • 1 packet lamb`s lettuce
  • 6 fig (s), fresh, ripe
  • 75 g walnuts
  • 2 tablespoon sugar
  • 100 g cheese your choice, spicy (e.. soft oat cheese, Parmesan)
  • Oil (walnut oil)
  • Balsamic vinegar, white
  • honey
  • salt and pepper
  • Herbs your choice, mixed

Instructions

  1. Wash the rocket and lamb`s lettuce thoroughly and sort. Remove the roots from the lamb`s lettuce. Dry the lettuce in the salad spinner. Arrange the salad on 4 plates. Wash the figs, pat dry and cut into eighths. Caramelize the walnuts in a pan together with the sugar until light brown and place on a greased aluminum foil or a greased brook tray. Separate the walnuts that are sticking together with two forks and then let them cool. Cut the cheese into small pieces. Arrange the figs, walnuts and cheese on the bed of lettuce.
  2. Mix the oil and balsamic vinegar in roughly equal proportions and season to taste with honey, herbs and spices.
  3. Drizzle the dressing over the salad.
  4. Fresh baguette goes well with the salad.
