The Most Real Ukrainian Borscht

Servings: 6

Ingredients

  • Beef brisket – 800 g
  • Water – 2.5 l
  • White cabbage – 300 g
  • Beets – 1-2 pcs.
  • Potatoes – 4-5 pcs.
  • Carrots – 1-2 pcs.
  • Bulb onions – 1-2 pcs.
  • Tomato paste – 1-2 tbsp
  • Lemon juice – 2-3 tbsp
  • Salt to taste
  • Dill – to taste
  • Vegetable oil – 30 g
  • Salted lard – 50 g
  • Garlic – 2 cloves

Directions

  1. Pour cold water over the meat in a saucepan and put on fire. Remove noise. After boiling, immediately reduce heat. Cover, cook for about 2 hours.
  2. Peel and wash the potatoes, cut into small cubes. When the meat is cooked, remove it. Strain the broth. Put the potatoes in the broth. Cook for about 20 minutes.
  3. Peel and wash onions and carrots. Dice the onion, grate the carrots on a coarse grater.
  4. Preheat a frying pan, pour in vegetable oil. Place the onions and carrots. Saute the onions and carrots in a frying pan over medium heat for 2-3 minutes. Then add the tomato paste. Fry them together for 5 minutes.
  5. Peel, wash, and grate beets. Drizzle 2-3 tablespoon. tablespoons of lemon juice. Put the beets with vegetables and simmer over low heat for 15 minutes. Wash and finely chop the cabbage.
  6. Place vegetables in a saucepan with potatoes. When everything boils, add the cabbage. Boil the cabbage for 5-7 minutes. Cut the meat into pieces and return to the saucepan.
  7. Meanwhile, peel the garlic. Cut the bacon into cubes. Grind the bacon and garlic in a mortar.
  8. Remove borscht from heat. Season with lard and garlic. Salt to taste. Let the borscht brew for 4-6 hours. Add finely chopped dill. Real Ukrainian borscht is ready. Serve (optional) with sour cream.
