Ingredients

  • 5 tablespoon mayonnaise
  • 100 g cream cheese
  • 1 teaspoon curry powder
  • salt
  • 8 slices toast
  • 8 slices cooked ham
  • 1 pineapple, fresh
  • 8 slices cheese, (medieval Gouda)
  • 2 tablespoon sugar
  • 20 g butter

Instructions

  1. Preheat the oven to 200 degrees (convection 180 degrees).
  2. Mix the mayonnaise with the cream cheese and curry powder, season with salt and pepper.
  3. Peel the pineapple, quarter it lengthways and cut out the woody center. Cut the pulp into 0.5 cm thick slices. Melt about 20 g butter in a pan. Put the pineapple in the pan, sprinkle with the sugar and let it caramelize.
  4. Roast the toast slices, let them cool and brush with the mayonnaise and cream cheese mixture. Place a slice of ham on top, then a slice of pineapple. Cover with the cheese slices and bake in the oven for about 10 minutes until the cheese is melted and lightly browned.
  5. Serve dusted with curry powder if desired.
