Ingredients

  • 200 g tofu, alternatively smoked tofu
  • 1 medium tomato (s)
  • 1 medium onion (s)
  • 1 clove garlic
  • 3 tablespoon olive oil
  • 3 tablespoon tomato paste
  • 1 tablespoon white wine vinegar
  • salt and pepper

Instructions

  1. Finely chop the onion and garlic and sauté in a tablespoon of olive oil over medium heat until translucent.
  2. Wash the tomato, remove the stem and the inside, cut into small pieces. Cut the tofu into small cubes and add everything to the onion and garlic in the pan and fry for another 3 minutes. Then add the tomato paste and fry again for 3 minutes, stirring constantly. Then take it off the stove and let it cool down.
  3. Pour the cooled mass into a tall mixing bowl, add 2 tablespoons of olive oil and the vinegar and puree with the hand blender.
  4. Season to taste with pepper and salt, spread the basil on top as a decoration.
