Ingredients

  • 250 g couscous
  • 500 g cherry tomato (s)
  • 1 large onion (s)
  • 100 g corn, frozen
  • 200 g feta cheese, 100% sheep milk
  • 1 teaspoon tomato paste
  • 2 tablespoon olive oil
  • salt
  • pepper
  • thyme
  • oregano

Instructions

  1. Pour 500 ml of boiling water over the couscous in a saucepan and let it soak for 5 - 10 minutes.
  2. Heat the olive oil in a pan, fry the onions cut into cubes until translucent, later add the tomato paste and fry briefly with the onions. Then add the quartered tomatoes and corn and simmer for 5 - 10 minutes while stirring. Now add the feta cheese, diced into small pieces, and season to taste with salt, pepper, thyme and oregano. It can be heavily seasoned because the couscous is unseasoned. Finally, mix in the couscous.
  3. Tip: This dish tastes very good with grilled chicken skewers.
