Instructions

  1. Hard boil the eggs, quench and leave to cool.
  2. Cut the tomatoes into slices and place them side by side on a plate. Cut the eggs into slices and place an egg slice on each tomato slice.
  3. Cut the green of the spring onion into fine rings and the onion as well. Arrange on the tomatoes.
  4. Mix oil and vinegar and season with salt and pepper. Drizzle over the tomato eggs.
  5. A fresh bread and butter tastes best with it.
