Tomato Raisin Muffin (Lean)

Ingredients

  • Tomato juice – 1 glass (200 ml)
  • Vegetable oil (refined) – 1 cup (190 g)
  • Flour – 2 cups (260-300 g)
  • Sugar – 1 cup (180 g)
  • Raisins – 50-100 g
  • Vanilla sugar (optional) – 1 sachet (10 g)
  • Salt – 1 pinch
  • Soda – 0.5 teaspoon

Directions

  1. Pour tomato juice into a bowl. Add sugar, salt. Add vegetable oil (in some recipes, it is advised to heat the oil well, for a softer cake; I did not heat it). Mix.
  2. Add soda (you can extinguish, but the function of vinegar is performed by the tomato juice itself). Mix.
  3. Sift flour. Add little by little, about half a glass, stir.
  4. The dough should have a consistency like thick sour cream.
  5. Rinse the raisins with hot water. Add to the dough, mix.
  6. Turn on the oven (preheat to 180 degrees).
    Grease the form with vegetable oil, you can sprinkle with flour. Put the dough into the mold. Place the dough pan on the middle shelf of the preheated oven.
    Bake the cake in vegetable oil and tomato juice at 180 degrees for about 30 minutes.
  7. The cupcake in vegetable oil and tomato juice is ready.
