Tomato Salad with Goat Cheese

• 8 small tomato (s), (vine tomatoes)
• 1 bunch rocket (or 80 grams tender spinach leaves)
• 1 small onion (s), white
• 1 tablespoon balsamic vinegar
• salt and pepper
• 2 tablespoon olive oil
• 100 g cheese, not too soft oat cheese

Instructions

1. Wash and slice the tomatoes. Wash and sort the rocket, shake the leaves dry. Peel the onion and cut into small cubes.
2. Arrange the rocket on plates, overlap the tomatoes on top. Sprinkle with the onion cubes.
3. Whisk together the vinegar, salt, pepper and oil, drizzle over the tomatoes. Crumble the cheese and spread over it.
