Tomatoes Stuffed with Shrimps

These prawn stuffed tomato and shrimp snack bars will brighten up any festive table.

Servings: 4

Ingredients

  • Medium tomatoes – 4 pcs.
  • Small shrimps (boiled) – 200 g
  • Mayonnaise (better homemade) – 60 g
  • Zest of one lemon
  • Fresh parsley (chopped) or chives – 15 g
  • Salt to taste
  • Ground black pepper – to taste
  • Lemon – 4 wedges
  • Fresh parsley – 4 leaves
  • Lettuce leaves

For filling (optional):

  • Green peas young
  • Radish
  • Carrots (chopped on a grater)
  • Bean sprouts

Directions

  1. Cut off the top of the tomatoes and gently take out all the pulp with a spoon. Sprinkle the inside of the tomatoes with salt and turn over on a paper towel.
  2. In a bowl, mix lemon zest with herbs and mayonnaise, season with salt and pepper to taste. Add shrimp, stir.
  3. Stuff the tomatoes with shrimps and cover the tomatoes stuffed with the shrimps previously cut off.
  4. Cover a serving plate with salad leaves. Put stuffed tomatoes on them, garnish with parsley and lemon (lemon zest). Optionally, it can be served with tomatoes stuffed with shrimps, green peas, radishes, carrots, bean sprouts, etc.
