Tortellini with Spicy Herbs

Ingredients

  • flour – 250g
  • egg – 1 pc.
  • vegetable oil – 1 tablespoon.
  • water – 1 glass
  • sea ​​salt – a little
  • butter – 2 tablespoons
  • shallottes – 200g
  • parsley – 1 bunch
  • chives – 1 bunch
  • bread (wholemeal flour, toasted and diced) – 1 cup
  • egg – 2 pcs.
  • pepper (ground) – to taste
  • nutmeg (grated) – 1 pinch
  • egg – 2 pcs.
  • vegetable broth – 1 l.

Directions

  1. Knead the hard dough from flour, eggs, vegetable oil, water and sea salt and refrigerate for at least 30 minutes. At this time, melt the butter in a frying pan and sauté finely chopped shallots in it until golden brown.
  2. Mix the sorted, washed and finely chopped spicy herbs with toasted cubes of wholemeal bread and add to the sautéed onion. Add the beaten eggs, season with salt, pepper, season with grated nutmeg and keep on low heat, stirring continuously, until the mixture thickens.
  3. Roll out the dough on a floured work surface as thin as possible and cut small squares out of it. On one half of each square, put a little mass with spicy herbs. Brush the edges with egg yolk and fold the square in half so that the filling is inside. Pinch the edges and cook in boiling vegetable broth for about 10 minutes. Place tortellini on plates, drizzle with a little broth and serve immediately.
