Ingredients

  • 4 thin turkey schnitzel
  • 8 sheets ham
  • 1 small carrot (cut into fine sticks)
  • 8 stems wild garlic
  • some salt and pepper
  • 1 tablespoon butter
  • 1 onion (s)
  • 2 tablespoon flour
  • 400 ml vegetable stock
  • 100 g wild arlic, finely chopped
  • 200 ml cream
  • Salt and pepper
  • some oil, for frying

Instructions

  1. Carefully pound the turkey schnitzel and season with salt and pepper on both sides.
  2. Place 2 slices of ham, a few carrot sticks and 2 wild garlic leaves on each schnitzel. Roll up tightly and possibly pin in place.
  3. Heat oil in a pan and sear the turkey rolls. After about 7 minutes, add a few tablespoons of water, put the lid on and let simmer for about 10 minutes (duration depends on the thickness of the rolls).
  4. For the sauce, melt the butter in a saucepan, sauté the finely chopped onion in it, dust with flour and pour on the broth. Mix well. Add the wild garlic to the sauce and the cream. Now puree the sauce well. Season to taste with salt and pepper.
  5. Serve the turkey rolls with potatoes and / or ribbon noodles and pour the wild garlic cream over them.
