Turkey with Vegetables

Ingredients

  • Minced turkey fillet – 1 kg
  • Onions – 2 pcs.
  • Garlic – 3-4 cloves
  • Fresh tomatoes – 1 kg
  • Zucchini – 500-700 g
  • Lightly salted cucumbers – 3-4 pcs.
  • Parsley – 1 bunch
  • Salt to taste
  • Ground black pepper – to taste
  • Italian herbs – 1 teaspoon
  • Mozzarella cheese – to taste
  • Vegetable oil – for frying

Directions

  1. Cut the turkey fillet into large pieces. Grind the fillet with a meat grinder.
  2. Finely chop the onion
  3. Fry the onions in vegetable oil until transparent. Add the sliced ​​garlic, stir and fry for another 1 minute.
  4. Add minced turkey, stir and fry until the liquid evaporates.
  5. Cut the courgettes and lightly salted cucumbers into large semicircles.
  6. Cut the tomatoes in half, and then cut each half across.
  7. Add zucchini, cucumbers, and tomatoes to the minced meat. Season with salt and pepper, add Italian herbs.
  8. Stir, bring to a boil, and simmer for 30 minutes uncovered.
  9. Add parsley leaves, stir. Cover with a lid, turn off the heat, and let stand for 10 minutes.
  10. Add mozzarella and parsley leaves to a plate with a ready-made turkey dish with vegetables.
