Ingredients

  • 3 tablespoon parsley, chopped
  • 3 tablespoons mint, chopped
  • 2 tablespoon dill, chopped
  • 1 pack dough (Yufka dough), from the Turkish trader
  • 400 g feta cheese, as low in fat as possible
  • 1 egg (s)
  • pepper
  • Oil for deep-frying

Instructions

  1. Chop the herbs, crumble the cheese into small pieces. Put the herbs, cheese and egg in a bowl, pepper and mix well. Shape the yufka dough into rectangles. Put approx. 1 tablespoon of the herb-cheese mixture on each of the lower ends. Then lightly beat the dough left and right over the filling so that nothing can run out later and roll the whole thing up into a cigar shape. Glue the ends together with your fingers wet with water. Do this until the batter and / or filling is used up. Heat enough oil in a pan that the rolls float in it. Place the rolls in the very hot fat and fry until crispy brown. Eat warm as possible.

  4. Cover the yufka dough with a damp kitchen towel before and during processing so that it does not become brittle. Broken areas can be smeared with water.
  5. You can also prepare the rolls with a cleverly seasoned minced meat mixture or other dry fillings.
