Ingredients

  • 500 g turnip (s)
  • 500 g potato (s)
  • 200 g onion (s), small
  • 250 g carrot (s)
  • 2 tablespoon clarified butter
  • salt and pepper
  • 700 ml meat stock
  • 50 g sour cream
  • 4 piece (s) sausage (Viennese sausages)
  • 1 bunch parsley
  • nutmeg

Instructions

  1. Wash the turnips, peel thick with a sharp knife and cut into 1.5 cm cubes. Peel the potatoes and also dice them. Peel and halve or quarter the onions. Clean, peel and slice the carrots.
  2. Heat the clarified butter and sear the vegetables in it. Salt, pepper. Deglaze with broth. Let the stew cook for about 30 minutes. Season with nutmeg and sour cream. Just before the end of the cooking time, add the sausages and let them steep. Wash the parsley, pat dry and chop finely. Sprinkle this over the stew before serving.
  3. Tip: You can also use ribs instead of sausages. The stew tastes really spicy with a slice of smoked bacon. The bacon is simply cooked with it.
