Such borscht can be cooked both in a meat broth and lean version. Ukrainian green borscht is delicious, especially with sour cream.

Ingredients
Broth or water – 2.5 l
Potatoes – 3-4 pcs.
Bulb onions – 1 pc.
Carrots – 1 pc.
Tomato paste – 1 tbsp
Sorrel – 2 bunches
Spinach – 1 bunch
Greens – 1 bunch
Rice – 0.25 cups
Green onions – 1 bunch
Vegetable oil – 30 g
Salt to taste
Directions
Peel and wash the potatoes. Cut into slices.
Rinse the rice well. Boil water (or broth). Lower potatoes and rice.
Peel and wash the onions and carrots. Dice the onion. Grate the carrots on a coarse grater.
Preheat a frying pan, pour in vegetable oil. Fry, stirring occasionally, onions and carrots over medium heat for 2-3 minutes. Add tomato paste, mix well. The frying is ready.
After 5 minutes of boiling the potatoes, add frying.
Peel and wash herbs, spinach, and sorrel. Chop the sorrel and spinach. Chop the herbs finely.
When the potatoes are ready, add all the greens. Salt to taste. Cook the green borscht under the lid on the lowest heat for 5-7 minutes.
Ukrainian green borscht is ready. Serve with sour cream. Enjoy your meal!
