Ingredients

  • 150 g speculoos
  • 200 g butter, soft
  • 150 g powdered suar
  • 5 drops flavor (vanilla)
  • 5 medium egg (s)
  • 300 grams flour
  • 1 packet baking powder
  • 1 pinch clove powder
  • 1 pinch (s) gingerbread spice
  • 250 ml currant juice, or apple juice
  • 1.2 kg apples
  • Lemon juice, or rum
  • Flaked almonds
  • Cinnamon, for sprinkling
  • Sugar, for sprinkling

Instructions

  1. Grease the drip pan or baking sheet and line the bottom with parchment paper.
  2. Finely grate the speculoos. Peel, quarter and slice the apples and drizzle with lemon juice or rum. Place in the refrigerator until ready to use.
  3. Mix the butter with the powdered sugar and the flavoring until frothy, stir in the eggs one by one. Mix the flour with baking powder, spices and speculoos and stir into the mixture alternately with the juice.
  4. Spread the dough on the baking tray and cover with the apple slices, pressing the apples lightly into the dough. Sprinkle with flaked almonds.
  5. Bake at 190 ° C top and bottom heat or 175 ° C convection for about 35-40 minutes. Sprinkle with a cinnamon-sugar mixture while it is still warm or leave to cool on the grid and then dust with powdered sugar.
