Ingredients

  • 4 sheets gelatin, white
  • 550 ml milk
  • 1 vanilla pod (s), the pulp
  • 1 packet vanilla sugar, bourbon
  • 4 tablespoon sugar
  • 100 g semolina (soft wheat)
  • 2 egg (s), size. M.
  • 250 g whipped cream
  • 400 g blackberries, frozen
  • 2 tablespoon powdered sugar
  • 50 ml apple juice

Instructions

  1. Soak the gelatine in cold water.
  2. Bring the milk with the vanilla pulp, vanilla sugar and sugar to the boil. Stir in semolina, remove from heat, let soak for 5 minutes.
  3. Squeeze out the gelatine. Stir well into the hot cream.
  4. Separate eggs. Mix the egg yolks with 2 - 3 tablespoons of hot semolina cream until smooth, fold into the rest of the cream. Let cool down.
  5. Beat egg whites and cream separately until stiff. First fold the cream, then the egg whites into the semolina mixture.
  6. Fill into pudding form or dessert glasses. Cover and cool overnight.
  7. Set aside 2 tablespoons of thawed blackberries. Bring the rest of the berries to the boil with powdered sugar and 4 tablespoons of water, puree, season to taste with juice. Let cool down.
  8. Turn the semolina flambé out of the mold. Serve garnished with sauce and the rest of the berries.
