Ingredients

  • 150 grams sugar
  • 200 g soy yourt (yourt alternative) (vanilla flavor)
  • 200 g flour
  • 80 ml oil (corn oil)
  • 2 teaspoons baking soda
  • 1 pinch (s) baking soda
  • 125 g blueberries
  • Margarine, vegan for the mold
  • Breadcrumbs, vegan for the mold

Instructions

  1. Grease the muffin tray with margarine (e.g. Alsan) and sprinkle with breadcrumbs. Mix the flour, baking powder and baking soda together. Mix the sugar, oil, yogurt and blueberries together.
  2. Mix the dry and wet ingredients together, but only stir until it is a nice batter. Distribute evenly over the hollows of the muffin tin.
  3. Bake at 170 ° C (hot air) for at least 20 minutes (maybe more, for me they were very juicy, but not too juicy).
  4. You can of course take more or less of the blueberries.
