Ingredients

  • 100 g reen spelled meal
  • 2 leeks
  • 1 onion (s)
  • 2 cloves garlic
  • 300 ml vegetable cream (vegetable cream cuisine)
  • 1 liter vegetable broth
  • 2 tablespoon sugar
  • 4 tablespoon yeast flakes
  • 1 tablespoon soy sauce
  • 1 teaspoon paprika powder, noble sweet
  • 1 teaspoon thyme
  • 2 teaspoons nutmeg
  • salt and pepper

Instructions

  1. Briefly sweat the green spelled meal in oil until it smells nutty and bring to the boil in 500 ml vegetable stock. Cover and leave to soak for 30 - 40 minutes in the pan on the switched off hotplate until it has a pleasant consistency (some like it more firm to the bite, some like it softer). Then strain and set aside.
  2. Dice the onion and sweat in oil in a saucepan until translucent. Wash the leek thoroughly, halve and cut into half rings, add to the onion. Press the garlic cloves through the press and add them as well.
  3. Steam everything briefly until the leek collapses. Then add 2 tablespoons of sugar and caramelize briefly. Finally, deglaze everything with 500-600 ml of vegetable stock and cook for 12-15 minutes.
  4. Then add the plant cream, paprika, nutmeg and thyme and simmer / steep for another 5 minutes on the switched off stove. When the soup has stopped boiling, stir in the soy sauce, green spelled meal and the yeast flakes and season to taste with salt and pepper.
  5. If you like it creamier, you can add more plant cream, if you like it more liquid, add more broth, depending on your taste.
