Ingredients

For the dough:

  • 200 g flour
  • 50 g cocoa powder
  • 100 g suar
  • 80 ml vegetable oil
  • 150 ml plant milk (plant drink)
  • 100 ml mineral water
  • 3 teaspoons baking powder
  • 1 packet vanilla sugar
  • 40 g nuts your choice, chopped
  • 1 large apple
  • 1 pinch (s) salt
  • 2 tablespoon applesauce

For the ganache:

  • 70 g veetable mararine, vean
  • 100 g chocolate, vean, e.., bitter
  • 2 tablespoon soy cream (soy cream cuisine) or oat cream
  • 100 g powdered suar

Instructions

  1. Either grease the muffin tin or cover it with paper liners and preheat the oven to 175 degrees top / bottom heat.
  2. Briefly mix the liquid ingredients with sugar, salt and applesauce. Then stir in the dry ingredients until a homogeneous dough is formed. If necessary, add a little more vegetable milk.
  3. You should peel the apple, cut it into small cubes and then fold it into the batter.
  4. Now pour the dough into the molds and bake in the preheated oven for 20-25 minutes. But to be on the safe side, do the chopstick test again.
  5. Let the muffins cool down.
  6. Meanwhile, you can prepare the vegan ganache. Simply let the cream, vegetable margarine and chocolate melt slowly over the water bath. Stir the powdered sugar into the melted mass with a whisk.
  7. Then put the ganache on top of the muffins. If you want to spray the cream in the piping bag onto the muffins, you definitely have to let them cool down until they have reached the right consistency. For me it took about 2 hours.
  8. Makes 12 cupcakes.
