  • 1 vegetable onion (s)
  • 1 red pepper (s)
  • Oil, for frying
  • 3 teaspoons curry powder
  • 400 ml coconut milk
  • 1 can lychee (s)
  • parsley, for garnish

Instructions

  1. Dice the onion and bell pepper. Heat the oil in the pan and braise the onion. Add curry powder and stir everything well. Deglaze with the juice of the lychees and add the coconut milk. Simmer gently for about five minutes and add the peppers. Simmer for another 10 minutes.
  2. Before serving, add the lychees and garnish with flat-leaf parsley.
  3. Fresh bread or rice goes well with it.
