Ingredients

For the sauce: (BBQ sauce)

  • 200 ml ketchup
  • 4 tablespoon maple syrup
  • 4 tablespoon apple cider vinegar
  • 4 tablespoon Worcestershire sauce, vegan
  • 2 teaspoons liquid smoke
  • 2 teaspoons mustard
  • 1 teaspoon salt

For the spice mix: (BBQ spice mix)

  • 2 tablespoon raw cane sugar
  • 1 teaspoon paprika powder, smoked
  • 1 teaspoon garlic powder
  • 0.5 teaspoon ½ salt
  • 0.5 teaspoon ½ pepper
  • 0.25 teaspoon ¼ cayenne pepper

Also:

  • 540 g jackfruit, reen, in pieces, in brine (reen jackfruit pieces in brine)
  • 4 burger buns
  • leaves Lettuce
  • Mayonnaise, vegan
  • Avocado (s)
  • Coleslaw

Instructions

  1. Mix the ingredients for the BBQ sauce and briefly heat them in a small saucepan or in the microwave.
  2. Mix together the ingredients for the spice mixture. Put the jackfruit in a colander, rinse and drain. Finely dice the onion.
  3. Mix 150 ml BBQ sauce with 50 ml water and set aside.
  4. Mix the BBQ spice mixture with the jackfruit pieces.
  5. Heat some oil in a large pan and sweat the onions until translucent. Add the fruits and fry for 3 minutes until the sugar is caramelized. Add the BBQ water mix and let the jackfruit simmer for 30 minutes over medium heat with the lid closed. After 30 minutes, chop the jackfruit pieces with the potato masher until they look fibrous (pulled jackfruit).
  6. In the meantime, place the rolls in the oven on the baking sheet and set the temperature to 180 degrees. When the rolls are brown and crispy, take them out of the oven. Place the pulled jackfruit on the tray and grill for another 10-15 minutes (if available) or bake.
  7. Divide the buns and hollow out the top lid so that the pulled jackfruit doesn`t slide out sideways when you bite into it. Brush the lower half with mayonnaise and put a lettuce leaf on top. Alternatively, top with coleslaw or avocado. Spread the pulled jackfruit on the burgers and put the top lid on.
  8. Sweet potato fries, potato wedges or coleslaw go well with it.
