Ingredients

  • 1 cucumber (s)

  • 1 handful coriander greens

For the dressing:

  • 3 tablespoon mirin
  • 1 teaspoon sugar
  • 2 cm ginger, finely grated
  • 1 stalk lemongrass, cut into thin rings
  • 1 pinch (s) sea salt
  • 1 pinch (s) Timut pepper, ground in a mortar

Instructions

  1. Wash, peel and thinly slice the cucumber. Put the slices in a salad bowl. Wash and chop the mint and coriander. Add to the cucumber slices.
  2. Mix all the ingredients for the dressing, season to taste. Pour over the cucumber and serve.
