Ingredients
- 1 cucumber (s)
- 1 handful mint
- 1 handful coriander greens
For the dressing:
- 6 tablespoon olive oil
- 3 tablespoon mirin
- 1 teaspoon sugar
- 2 cm ginger, finely grated
- 1 stalk lemongrass, cut into thin rings
- 1 pinch (s) sea salt
- 1 pinch (s) Timut pepper, ground in a mortar

- Wash, peel and thinly slice the cucumber. Put the slices in a salad bowl. Wash and chop the mint and coriander. Add to the cucumber slices.
- Mix all the ingredients for the dressing, season to taste. Pour over the cucumber and serve.
