Ingredients

  • 2 zucchini
  • 1 potato (s)
  • 1 onion (s)
  • 1 clove garlic
  • 650 ml vegetable stock
  • 50 ml soy cream (soy cream cuisine)
  • salt and pepper
  • Olive oil for frying
  • possibly nutmeg
  • possibly chili powder

Instructions

  1. Wash the zucchini and then cut off the ends and cut into large pieces. Peel the potato, peel the onion and dice both. Finely chop the garlic.
  2. Heat some olive oil in a saucepan, then add the zucchini, sauté a little and add the potatoes. Now everything is steamed for about 5 minutes and then the onion and garlic are added. Let everything steam again briefly and then deglaze with the vegetable stock. Put the lid on and simmer over medium heat for 30 minutes.
  3. Now puree the vegetables and add the soy cream at the end and season with salt and pepper. If you like, you can also add a pinch of nutmeg or chilli.
