Vegetable Burrito with Beans

The meatless burrito is a Mexican dish that is light, hearty, spicy, and tasty. Rice and vegetables are wrapped in a corn tortilla. Any filling can be.

Ingredients

  • Rice – 2 glasses
  • Lime – 2 pcs.
  • Cilantro – 1/4 glass
  • Zucchini – 2 pcs.
  • Corn – 2 pcs.
  • Olive oil – To taste
  • Black beans – 320 g
  • Flatbreads – 6 pcs.
  • Onions – 1 pcs.
  • Tomatoes – 2 pcs.
  • Grated cheese – 1 glass
  • Sauces, spices – To taste
  • Zucchini – 1 pcs.

Directions

  1. Fry the rice for 2 minutes in oil, then cover with broth and cook. Rub the zest of the limes. Add it to the rice. Squeeze out the juice. Bring rice to a boil, simmer for 25 minutes, covered.
  2. Rinse canned beans. Grease the corn and zucchini and grill. Cut the finished vegetables into pieces, peel the corn. Grate the cheese and chop the herbs.
  3. Add some of the cilantro and spices to taste to the rice. Place the rice on the cake. Add beans, corn, zucchini, onions to the rice.
  4. Arrange the tomatoes and pour over the juice, add the cilantro and cheese. Wrap the cake tightly. Bon Appetit!
