Ingredients

  • 3 medium potato (s)
  • 1 small zucchini
  • 1 small kohlrabi
  • 0.5 ½ small turnip (s)
  • 1 medium onion (s)
  • 2 egg (s)
  • some flour
  • some salt and pepper
  • some nutmeg
  • 100 g sheep cheese
  • 1 cup quark, approx. 250 g
  • 100 g sour cream
  • Herbs like dill, parsley
  • 1 teaspoon balsamic vinegar, optional
  • Oil for frying

Instructions

  1. Wash and clean the vegetables. Then peel the kohlrabi, potatoes, turnip and onion. Then grate all the vegetables into small pieces. Put everything in a bowl and season with salt. Set these aside for now and prepare the quark.
  2. To do this, mash the cheese in a bowl with a fork and mix it with the quark and sour cream. Mix in herbs according to taste and season with salt and pepper. I like to add a dash of balsamic vinegar.
  3. Some liquid has now collected in the bowl with the vegetables - pour it off. Then mix the eggs and flour (about 3 tablespoon) into the vegetable mixture and mix well. Then season with pepper and, if you like, with nutmeg.
  4. Heat the oil in a pan, use a spoon to add some vegetable dough to the pan and spread on it. Fry them crispy on both sides.
  5. Serve the pancakes with the quark.
  6. The vegetables can actually be exchanged depending on your taste, although I particularly like to use the turnip for the pancakes.
