Vegetable Pilaf with Mushrooms Ingredients

  • Rice – 1.5-2 cups
  • Champignons – 300-400 g
  • Carrots – 1 pc.
  • Pumpkin – 200 g
  • Bulb onions – 1-2 pcs.
  • Salt to taste
  • Pepper to taste
  • Curry – to taste
  • Sugar – 0.5 teaspoon
  • Vegetable oil – 30-40 g

Vegetable Pilaf with Mushrooms Instructions

  1. Rinse the rice well. Boil the kettle. Pour boiling water over the rice for 5-7 minutes. Drain the water.
  2. Peel the onion, wash and cut into cubes.
  3. Peel, wash, and grate the carrots. Peel the pumpkin, grate on a coarse grater.
  4. Rinse the mushrooms well, cut into thin slices.
  5. Preheat a frying pan, pour in vegetable oil. Put onion, pumpkin and carrots in hot oil. Simmer over medium heat, stirring occasionally, until soft (2-3 minutes).
  6. Place the prepared mushrooms.
  7. Simmer over medium heat, stirring occasionally, for 4-5 minutes. Season with salt and pepper, add spices and sugar. Mix.
  8. Put prepared rice on the vegetables in an even layer.
  9. Pour boiling water over everything, the water level should be two fingers higher than the rice.
  10. Cover the pilaf with a lid. Reduce heat to a minimum. Cook vegetable pilaf until rice is cooked, about 30-35 minutes. Do not remove the cover!
  11. Vegetable pilaf with mushrooms is ready.
