Vegetable Snack Cake with Zucchini

You always want to cook some interesting appetizer, so in this recipe I will tell you how to make a vegetable snack cake with zucchini – a very beautiful, hearty and fragrant snack cake!

Servings: 4-6

Ingredients

  • Zucchini – 4 Pieces
  • Carrots – 1 Piece
  • Potatoes – 4 Pieces
  • Pickled cucumbers – 3 Pieces
  • Tomato – 1 Piece
  • Garlic – 6 Cloves
  • Greens – 1 Bunch
  • Salt – 1 To taste

Directions

  1. Cut the zucchini into rings and fry it in a little vegetable oil.
  2. Grate the carrots on a coarse grater, fry them, add finely chopped garlic at the end. Season with salt and stir in finely chopped herbs.
  3. Line the bottom of the bowl with plastic wrap to form the cake. Lay out half of the carrots first, press well. Then place a layer of toasted zucchini, working up the sides of the bowl.
  4. Layout the remaining half of the carrots and press well. Brush with mayonnaise or sour cream. Boil and cool the potatoes, cut them into small cubes and place them on the carrot layer, sprinkling garlic to it. Press well. Brush everything with mayonnaise or sour cream and lay out the cucumbers cut into circles.
  5. Brush everything again with mayonnaise or sour cream and lay out the last layer of zucchini. Wrap the cake in plastic wrap and press firmly to prevent the cake from falling apart. Refrigerate for a few hours, then gently unfold and place on a dish. Decorate the cake with tomatoes and herbs.
