Vegetable Stew Ingredients

  • Potatoes – 2 pcs.
  • Zucchini – 1 pc.
  • Tomatoes – 2 pcs.
  • Bulgarian pepper – 1 pc.
  • Carrots – 1 pc.
  • Bulb onions – 1 pc.
  • Fresh parsley – 30 g
  • Fresh basil – 30 g
  • Garlic – 1 clove
  • Salt – 1 teaspoon
  • Ground black pepper – ½ teaspoon
  • Vegetable oil – 2 tbsp

Vegetable Stew Instructions

  1. Finely chop parsley and basil, add salt, pepper, and 1 minced garlic clove, mix well.

  2. Cut all vegetables into small cubes.
  3. Add vegetable oil to a preheated frying pan and put onions. Fry the onions for 1 minute.
  4. Add carrots and fry for 3 minutes.
  5. Add potatoes and fry for 10 minutes, stirring occasionally.

  6. Add tomatoes and peppers, fry for another 5 minutes.
  7. Mix everything and put the zucchini on top, without stirring. Cover and simmer the vegetable stew over low heat for 20 minutes.

  8. Turn off the stove, add prepared herbs to stewed vegetables and mix gently.

The vegetable stew is ready.
