Vegetable stew is one of the most popular dishes on our table. A stew usually combines a variety of vegetables in an arbitrary amount, which gives a lot of room for imagination. Stew according to this recipe is made from potatoes, with green peas and tomatoes in their own juice. It turns out a very tasty, juicy, and aromatic vegetable dish.

Ingredients
Potatoes – 400 g
Frozen green peas (or fresh) – 220 g
Tomatoes in their own juice – 200 ml
Carrots – 1 pc.
Bulb onions – 1 pc.
Garlic – 2 cloves
Dried oregano – 0.5 teaspoon
Green onions – to taste
Salt to taste
Ground black pepper – to taste
Vegetable oil – for frying
Directions
Prepare the ingredients for the green pea vegetable stew.
Peel and dice the potatoes.
Peel the onions and carrots and cut them into small cubes.
In a frying pan, fry the onion until transparent, season with salt and pepper. Add carrots and fry with onions for 5-7 minutes over medium heat.
Then put the potatoes in the pan. Sprinkle with dried oregano and add the whole peeled garlic cloves. Pour in some hot water to cover the potatoes by about half. Cover the pan with a lid and simmer the vegetables until soft.
When the potatoes are almost ready, add the tomatoes in their own juice to the pan. Cover the pan with a lid and simmer the potatoes in the tomato sauce for another 5-7 minutes.
At the end of cooking, add frozen green peas (without defrosting) and finely chopped green onions to the potato stew. Bring to a boil and cook the vegetable stew with green peas for another 5 minutes.
Delicious potato stew is ready.
Serve hot vegetable stew as a side dish or as a separate dish.
