Ingredients

  • 400 g minced beef
  • 1 onion (s)
  • 1 zucchini
  • 2 tomato (s)
  • 2 bell pepper (s)
  • 200 g mushrooms, white or brown
  • 1 small can corn, or mini corn cob from the jar
  • 1 clove garlic
  • 2 cup basmati
  • 1 teaspoon tomato paste
  • salt
  • pepper
  • Cayenne pepper
  • Paprika powder
  • 150 ml vegetable stock
  • oil

Instructions

  1. Wash the vegetables, clean the mushrooms and cut into bite-sized pieces (not too small). Cut the onion into strips and finely chop the garlic.
  2. Cook the rice according to the instructions on the packet.
  3. Meanwhile, fry the minced meat in a pan and then add the peppers, zucchini, onions and garlic. Fry for another 5 minutes. Then reduce the temperature and add the broth. Season with salt and pepper. Cover and simmer.
  4. Then put the tomatoes, peppers, mushrooms and corn in a second pan and fry with a little oil.
  5. Stir the tomato paste into the minced meat pan and season with paprika powder and cayenne pepper. Then add the vegetables from the second pan, stir and season again if necessary.
