Vegetarian Breakfast Burrito

A veggie burrito is a very healthy and delicious snack for work or school. You can also use it as your own breakfast. This recipe is simple and delicious.

Ingredients

  • Red onion – 1 pc.
  • Canned beans – ½ cup.
  • Canned corn – ½ cup
  • Chili pepper – 1 pc.
  • Corn tortilla – 4 pcs.
  • Cheddar cheese – 100 g
  • Vegetable oil – for frying
  • Cilantro – 30 g
  • Salt
  • Pepper
  • Zira
  • Bulgarian pepper (different colors) – 3 pcs.

Directions

  1. Cut the onion into strips, peel, and cut the peppers into small pieces. Fry all vegetables in a pan, after adding canned beans and corn to them, fry the products for another 4 minutes.
  2. Pour 100 ml of water into the pan, add salt and spices. Simmer vegetables for a few minutes. When the heat is off, add chopped cilantro and stir all the vegetables.
  3. Put the tortilla sheets in the microwave for 30 seconds. Then take them out and spread them out on the table. Put the filling on each sheet, sprinkle with cheese and roll up with an envelope. After the burrito, fry in a dry frying pan until golden brown.
