Ingredients

  • 300 g chanterelles, (Reherl)
  • 1 small onion (s), finely diced
  • 2 clove (s) garlic, finely diced
  • 150 g ham, diced
  • salt and pepper
  • Cayenne pepper
  • 1 cup crème fraîche, or cream
  • Oil, for frying
  • Parmesan

Instructions

  1. Fry the diced onion and garlic in a pan with a little oil. Then add the ham cubes. Fry them together for approx. 5 minutes, until the ham has got some color. In the meantime, clean the Reherl and cut it into small pieces, then put it in the pan and let it fry. Then season with salt, pepper and cayenne pepper to taste. Thicken the whole thing with crème fraîche or cream to taste.
  2. This sauce tastes good with all pasta and is served with parmesan.
