Ingredients

  • 2 tablespoon olive oil
  • 12 small tomatoes (vine tomatoes)
  • sugar
  • salt
  • Black pepper
  • 4 tablespoon Balsamico Rosso
  • 0.5 ½ mozzarella
  • Basil, fresh

Instructions

  1. Halve or quarter the tomatoes, depending on size and taste. Halve the mozzarella and cut into very thin slices.
  2. Heat the olive oil in a non-stick pan. Place the tomatoes in the pan with the cut surface facing down (caution, splashes may be!) And let the color take off very slightly. Sprinkle sugar evenly over the top, toss carefully and let caramelize briefly. Season with salt and pepper. Deglaze with balsamic vinegar, allow to reduce briefly. Take the pan off the hob before the tomatoes crumble completely.
  3. Arrange tomatoes on preheated dishes, cover with mozzarella slices. You may have to wait a moment for the cheese to melt slightly. Garnish with basil leaves.

  5. (The quantities for sugar and balsamic vinegar are only an estimate, I always do it by feeling. Vary the quantities as you like it best.)
