Ingredients

  • 1 head endive salad
  • 250 g bacon, streaky
  • 400 g potato (s), floury boilin
  • 1 large onion (s)
  • 1 tablespoon oil
  • salt and pepper
  • Fat, for frying as required
  • 800 g black puddin (which can be fried)
  • sugar
  • vinegar

Instructions

  1. Peel and dice the potatoes and cook in salted water.
  2. In the meantime, clean and wash the endive salad and cut into strips approx. 2 cm wide. Drain well after cutting.
  3. Peel the onion, cut into fine cubes and place in a large salad bowl. Prepare a strong dressing from vinegar, pepper, salt, sugar and oil and add to the onions. Put the drained lettuce in the bowl.
  4. Dice the bacon and, just before the potatoes are done, let them crisp in a pan. Drain the potatoes and add to the salad with the bacon.
  5. Cut the black pudding into slices and fry them in a pan with fat until crispy.
  6. Mix the salad well and best serve warm immediately with the black pudding (separately).
  7. Tip: This is an old original Mülheim recipe - if you don`t like black pudding, you can also serve meatballs or fresh bratwurst with it.
