Ingredients

  • 2 medium onion (s), red
  • 8 slices bacon, thinly sliced
  • 4 sprigs thyme
  • 1 handful pine nuts
  • 1 pinch (s) salt
  • 4 leaves rocket, fresh spinach or other lettuce
  • Balsamic vinegar
  • Parmesan
  • olive oil

Instructions

  1. Peel and cut the onions into eighths. Heat a frying pan and fry the bacon until crispy, remove. Pour a few dashes of olive oil into the pan and add the thyme, the onions, pine nuts and salt. Mix together and fry for about 5 minutes over medium heat until the onions are golden brown (not black!). Put the bacon back in the pan, mix and place everything in a bowl with rocket. Drizzle generously with balsamic vinegar - when the vinegar mixes with the olive oil, a very simple dressing is created. Grate the parmesan cheese over it with the potato peeler. Serve IMMEDIATELY and enjoy (very important, otherwise it will get mushy)!
