Ingredients

  • 2 slices watermelon (s), low in seeds, 0.5 cm thick
  • 0.5 ½ avocado (s)
  • 125 g buffalo mozzarella
  • 1 handful rocket, small leaves

For the dressing:

  • 1 ½ tablespoon white balsamic vinegar
  • salt and pepper
  • 1 ½ tablespoons extra virgin olive oil

Instructions

  1. For the dressing, mix the balsamic vinegar with salt and pepper and beat in the oil.
  2. Peel the melon and avocado and cut into pieces. Drain the mozzarella, cut into slices. Clean, wash and spin dry the rocket.
  3. Lay the melon, avocado, mozzarella, rocket, again melon and avocado in a circle on the serving plates, drizzling with a little dressing on each.
