Ingredients
- 1 tablespoon vegetable oil
- 1 onion (s), chopped
- 1 clove (s) garlic, pressed
- 1 teaspoon salt
- 1 tablespoon ginger, freshly grated
- 0.25 teaspoon ¼ chili sauce
- 600 g sweet potato (s)
- 3 cup water
- 3 cup / s tomatoes, happened
- 1 cup (s) peanuts, freshly roasted, chopped or /2 cup peanut butter
- 0.5 teaspoon ½ allspice
- 2 tablespoon coriander greens or 1 spring onion, chopped

- Heat the oil in the saucepan, add the onion and sweat until translucent. Add the ginger and garlic and sauté for 1 - 2 minutes.
- Add the diced sweet potato, the water and the salt and bring to the boil. Reduce the heat and simmer for 15-20 minutes until the sweet potatoes are tender.
- Add the tomatoes, the peanuts or peanut butter, allspice and chili sauce. Puree with the magic wand and heat again. Garnish with coriander leaves or spring onions.
