Ingredients

  • 5 large egg (s), beaten
  • 1 medium tomato (s), diced
  • 1 pepper (s), color to taste, diced
  • 1-sized potato (s), diced
  • 1 onion (s), finely diced
  • 50 g cheddar cheese, rated
  • salt and pepper
  • Olive oil for frying

Instructions

  1. Boil the potato pieces for about 10 minutes.
  2. In the meantime, let the onion become translucent in the oil and then add the drained potatoes. Do not fry the potatoes, just let them cook. Season to taste with pepper and salt. Then add the peppers. Just before the peppers are done add the tomatoes and cheese. Finally, put the beaten eggs on top of the vegetables and stir gently. Let the egg freeze and serve nicely garnished.
