Instructions

  1. Put the flour and sugar in a bowl with a lid and beat until smooth with the milk and buttermilk. Now leave this mixture in the kitchen until the dough starts to ferment, i.e. it starts to bubble. Depending on the warmth, this takes 1-2 days. You can then store the dough in the closed container in the refrigerator and feed it as described in the Robert letter below. This wheat sourdough can also be prepared and fed with wheat flour type 812.
  2. Robert-Brief: For one approach Robert to baking bread: I`m Robert, Hermann`s brother, who is responsible for the cake. I am your new family member for a period of 10 days or more. If you treat me carefully and feed me regularly, I will give you two children. Please only keep me in glass or plastic bowls. I absolutely don`t like metal. Originally I didn`t want a fridge either, but my new producer weaned me from that.
  3. Day 1: You don`t need to take care of me today, we have to get used to each other first!
  4. 2-4 Day: I would like to have some exercise on these days. Please stir me with a wooden spoon once a day.
  5. Day 5: Today I am very hungry, so I feed myself with: 100 g wheat flour type 550 or 812, depending on the batch, 200 ml milk (3.5%) and 20 g sugar (if the bowl is not big enough, (2.5l content) pour the Robert into a larger bowl so that I cannot start my own business.
  6. 6-9 Day: Take a walk to help digestion, that means stir again every day.
  7. Day 10: Feed me again: 100 g wheat flour type 550 or 812, depending on the batch, 200 ml milk and 20 g sugar.
  8. Now that you have fed Robert again, you can divide him into 4 servings or use them depending on the recipe. But first take away 200 g for a new batch, for feeding, so that you can bake bread again in 10 days.
  9. According to the old custom, a part-200g- is given to a friend with the Robert letter. With the other parts you can now try delicious recipes, you will find that your breads become even looser and softer.
  10. If you don`t want to bake bread and the Robert is ready in the fridge, there is also a cake recipe.
  11. Comment: Robert is not that sensitive at all! He doesn`t mind if you can`t bake on the 10th day. Stirring is important, then it will hold until the next day or the day after that. Do you need more sourdough? Simply feed him 1½ times the amount.
