Whip up Coffee Cake

Ingredients

  • Kefir 2.5% – 0.5 Cups (100 ml)
  • Instant coffee – 4 Teaspoons
  • Eggs – 2 Pieces
  • Sugar – 1 Glass
  • Butter – 100 grams
  • Flour – 1 Glass (130 grams)
  • Soda – 1 Teaspoon
  • Vinegar – 3-4 Teaspoons
  • Sour cream – 200 Milliliters
  • Sugar – 3-4 Art. spoons (in cream)

Directions

  1. 20 minutes before the start of the cake preparation, add instant coffee to kefir at room temperature, stir. It takes time for it to dissolve.
  2. Beat two eggs in a fluffy foam, then add sugar there and mix with a blender at high speed until the sugar dissolves.
  3. The butter should be soft, slightly melted. We send it to a bowl for the eggs, and also pour out the kefir, where the coffee has already dissolved. Mix everything with a blender until smooth.
  4. Mix the sifted flour with a blender with the resulting mixture. When the mass becomes homogeneous, you can stop.
  5. To make the cake lush, add a teaspoon of baking soda to the dough, after extinguishing it with 9% vinegar (about 3-4 teaspoons). Stir.
  6. Now you can take out the baking dish. Lubricate the bottom and sides with oil. If you are cooking in a slow cooker, set the Baking program for 50-60 minutes, while checking the degree of baking with a toothpick. If you cook in the oven, the temperature should be 160-170 degrees, the readiness of the cake must also be determined with a toothpick. There should be no raw dough inside.
  7. After cooking the cake, gently take it out of the mold with a plastic or wooden spatula, set it to cool
  8. To prepare the cream, mix 1-1.5 tablespoons of instant coffee with sour cream. It takes about 20 minutes for the coffee to dissolve in the sour cream. Add 3-4 tablespoons of sugar or powdered sugar at once.
  9. Cut the cooled cake into 2 parts, saturate each part with cream on the side of the cut. After 15 minutes, repeat the procedure, so the cake will be juicier.
  10. Connect parts of the biscuit, pour the remaining cream on top. You can decorate with grated chocolate, nuts or finely chopped dried fruits.
  11. For a few hours (or better at night), put the cake in the refrigerator. The cakes will be soaked in cream, it will also be easier to cut. Your perfect dessert is ready!
